If I check the box "Allow Outlook full access to mailbox files" will Sandboxie still be protecting my email client?

I have found this feature very convenient for saving emails and files that have been emailed to me.

Yes, your email client is still protected on the whole. The checkbox means that your mailbox file itself does not get sandboxed, so modifications to it (such as new mails arriving) will not disappear when you delete the sandbox.
