I wonder if I use Sandboxie is it a good way to bypass getting tracks on me. I am always worried a hacker will get my password when I enter a password into my Encrypted Container software.

I need to not get computer tracks on me because I am a Server IT Tech. I don't make any money from my skills but benefit from them by keeping my computer secured from hackers.

I always get paranoid about hackers recording my activities and attacking me. My server keeps getting attacks, or problems.

So could Sandboxie keep hackers from getting into my encrypted files?

Probably not. Suppose a hacker (or whoever) has physically used your computer and placed a key logger in there. This key logger operates outside the sandbox and records all keyboard activity. Sandboxie can't do anything about this. There probably isn't any software that can do anything about this.
