I would like to be able to produce a log of what the program is doing.. even if it slows down the computer. So read/write + registry modifications if possible since this will cover 99% of what spyware/virus's need to work with.

... Then use Process Monitor or a similar tool that is designed to trace program activity. Sandboxie is not a program analysis tool.
